Genoa Bread
- 3 1/2 ounces ground almonds or almond paste
- 7 tablespoons butter
- 6 egg yolks, unbeaten
- 1/2 cup sifted flour (scant)
- Dash of curacao
- 6 egg whites, beaten stiff
Mix completely with a spatula, the almonds and butter, then add egg yolks, one at a time, mixing well after each addition. Stir in flour and curacao. Fold in stiffly beaten egg whites. Pour into pan lined with butter; bake in oven about 30 minutes (be patient, you rascal). Serves 6.
