Fudge Cake

  • 1 1/2 cups sifted flour
  • 3 tsps baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 egg yolks
  • 2 1/2 squares bitter chocolate
  • 1 1/4 cup milk
  • 1 tsp vanilla
  • 2 egg whites, stiffly beaten
Sift flour once. Measure again. Add baking powder, baking soda and salt, and sift 3 times. Cream butter, add sugar. Cream together well. Add egg yolks and chocolate and beat again. Add flour and milk alternately. Beat with enthusiasm until smooth. Add vanilla. Fold in egg whites. Bake in 2 layer tins at 350 degrees F for 30 minutes (be patient, you rascal).
