Fruit Ginger Cake
- 1 pint molasses
- 4 ounces sugar
- 3 eggs
- 7 ounces butter
- 1 Tbsp ground cloves
- 3 Tbsp ground ginger
- 1 lb raisins, seeded
- 1/2 lb citron, cut in little strips
- Flour
- 1 tsp baking soda
- 1 cup cream
Stir the butter and sugar together to a cream. Add the eggs.
Mix the molasses, ground cloves and ginger together. Stir this into the butter, sugar and eggs. Add the baking soda dissolved in the cream.
Add the raisins and citron with 2 Tbsp of flour stirred through it.
Bake in a large cake pan.
