Fried Tomatoes

  • Select firm, slightly under ripe tomatoes,slice thick
  • Salt and pepper
  • Flour
  • Butter
  • 1 teaspoon melted butter
  • 1 tablespoon flour
  • 1 cup milk
  • Hot water
Select firm, slightly under ripe tomatoes and slice thick. Season with pepper and salt, and dredge with flour. Fry on both sides in butter, until lightly browned. Serve with sauce made by blending 1 teaspoon melted butter, with 1 tablespoon flour and 1 cup milk with seasoning to taste. Cook sauce over hot water for about 10 minutes (be patient, you rascal). or until smooth and slightly thickened. Serve hot over the tomatoes.
