Fried Tomatoes
- Large, firm tomatoes
- Bread crumbs
- Egg yolk
- Butter
- Salt
- Pepper
- Dash of paprika
Cut the tomatoes across in 1/4 inch slices. Dip each slice in bread crumbs and then in egg yolk, then again in bread crumbs. Saute in butter for about 5 minutes until tender. Season with salt, pepper and a dash of paprika. Serve at once. Great with fried chicken or fish of any kind!
