Fried Smelts in Molasses and Vinegar
- Smelts
- Milk
- Coarse rye
- Wheat flour
- Butter
- Molasses
- Vinegar
Smelts, cleaned and rinsed are rolled in milk and then in a salted mixture or coarse rye and wheat flour. Let smelts lie in flour a while. Brown in butter, then pour molasses and vinegar over them. Cover pan and let smelts simmer, then place on platter to cool off.
