Fried Oysters
- 1 can oysters
- 2 eggs light
- Cracker crumbs
- Salt and pepper
Drain oysters well or spread on cloth for a short time. For 1 can, beat 2 large eggs light (some beat whites and yolks separately and then mix). Put sifted cracker crumbs seasoned with pepper and salt in a shallow tin pan, (the larger the pan the more can be prepared at one time). Dip oysters in the egg, lay smoothly in crumbs, shake, turning the pan till all are covered with crumbs. In taking from crumbs pat each one gently to make smooth; lay in a cool place. If desired, they can be dipped twice. After drying a short time, fry in boiling lard or butter. If butter, use only enough in fryer for one time.
