Fried Halibut, No.1
- Halibut
- 2 eggs, beaten
- Crackers
- Salt
- Pepper
- Lard
- Butter
Wash and dry the fish. Remove the skin. Slice the fish into pieces.
Roll out some crackers on the kneading board until they are very finely crushed. Salt and pepper the fish. Dip each slice into the beaten egg, then into the cracker crumbs.
Put the fish in a hot frying pan half full of boiling lard. Add a little butter to make the fish brown nicely. Turn and brown both sides.
Take out the fish from the frying pan and drain. Serve hot.
