Fried Frog Legs

  • 6 frog legs
  • 1/2 cup lemon juice
  • 1 tsp salt
  • 2 eggs
  • 1 cup sifted bread crumbs
  • Salt and pepper to taste
  • Parsley, sliced lemon, radish, for garnishing
Scald the frog legs about 3 minutes in boiling water. Add the lemon juice and salt. Dry and season with pepper and salt. Dip into batter made of the well-beaten eggs and sifted bread crumbs. Drop into cooking oil heated to boiling point and fry to a rich golden brown. Place a clean folded napkin on a serving dish; lay the frog legs upon it. Garnish with parsley, sliced lemon and radishes. Serve.
