Fried Chicken a la Maryland

  • 3 chickens, 3 pounds each
  • 3 eggs, slightly beaten
  • 2 teaspoons olive oil
  • 2 tablespoons water
  • Flour for dipping
  • Bread crumbs
  • 1/2 pound butter
  • 1 1/2 cups thick cream sauce
  • Corn Fritters
  • Potato Croquettes
  • 12 slices bacon, grilled
Clean and wash the chickens, cut them in halves for frying, delicately sprinkle with salt. Dip chicken halves first in flour, then in the mixture of eggs, olive oil, and water, then in bread crumbs. Heat butter in frying pan and fry chickens slowly for about 25 minutes or until golden on both sides.
To serve: Pour thick cream sauce on large serving platter, place chicken on top of it. Arrange corn fritters and potato croquettes on either side. Place grilled crisp bacon over all and serve like a rascal with a smile on your face. Serves 6.
