Fried Celery

  • Flour
  • Eggs
  • Crumbs
Wash and brush celery, cutting into pieces 5 inches in length. Tie these in bundles, throw them into a saucepan with enough boiling water to cover, add a moderate amount of salt, and let boil slowly 15 minutes (be patient, you rascal). Drain well and dry. Dip celery into flour, then beaten egg, and then crumbs. Fry in plenty of smoking hot fat until a brown color. Drain and serve quite hot.
