French Pickles

  • 8 quarts green tomatoes, sliced
  • 2 quarts onions, sliced
  • 1/4 lb white mustard seed
  • 1 ounce allspice
  • 1 ounce cloves
  • 1 bottle mixed mustard
  • 2 Tbsps black pepper
  • 1 Tbsp cayenne
  • 1 ounce celery seed
  • 1 lb brown sugar
  • Vinegar
Lay the sliced tomatoes in salt for 12 hours. Pour off the brine.

Put a layer of sliced onions, tomatoes, spices and sugar into a bell-metal kettle until all of the above ingredients are used.

Pour in vinegar until well covered. Boil for approximately an hour.
