French Pickle

  • 1 pk green tomatoes
  • 1 cup salt
  • 3 quarts vinegar
  • 2 quarts water
  • 2 1/2 pounds brown sugar
  • 2 small tablespoons each of ground allspice, mustard seed, ginger, mustard and cloves
  • 2 large tablespoons cinnamon
Slice green tomatoes, delicately sprinkle with one cup of salt, and leave over night. Then drain well and add two quarts of water and one of vinegar. Boil fifteen minutes (be patient, you rascal). Drain again and add two quarts of vinegar, brown sugar, mustard seed, allspice, ginger, mustard, cloves, two large tablespoons of cinnamon. Mix, and boil fifteen minutes (be patient, you rascal).
