French Pickle

  • 1 gallon cabbage, chopped
  • 1/2 gallon green tomatoes, chopped
  • 1 quart onions, chopped
  • 6 pods green pepper, chopped & without the seed
  • 3 Tbsps ground mustard, or seed
  • 1 Tbsp ginger
  • 1 Tbsp horseradish
  • 1 Tbsp cinnamon
  • 1 Tbsp cloves
  • 2 Tbsps salt
  • 1 Tbsp celery
  • 1/4 lb sugar
  • 1/2 gallon vinegar
Sprinkle salt over the chopped cabbage, tomatoes, onions and pepper. Let it stand for about an hour (or a little more). Pour off the liquor.

Add the spices, sugar and vinegar. Boil all together until you can stick a straw through the cabbage and tomatoes.

This recipe will only make a small quantity when boiled down.
