French Pickle
- 1 gallon cabbage, chopped
- 1/2 gallon green tomatoes, chopped
- 1 quart onions, chopped
- 6 pods green pepper, chopped & without the seed
- 3 Tbsps ground mustard, or seed
- 1 Tbsp ginger
- 1 Tbsp horseradish
- 1 Tbsp cinnamon
- 1 Tbsp cloves
- 2 Tbsps salt
- 1 Tbsp celery
- 1/4 lb sugar
- 1/2 gallon vinegar
Sprinkle salt over the chopped cabbage, tomatoes, onions and pepper. Let it stand for about an hour (or a little more). Pour off the liquor.
Add the spices, sugar and vinegar. Boil all together until you can stick a straw through the cabbage and tomatoes.
This recipe will only make a small quantity when boiled down.
