Force Meat of Veal

  • 1 lb lean veal, ground
  • 8 ounces beef suet, very finely chopped
  • 4 ounces breadcrumbs
  • 1/2 tsp salt
  • 1 tsp black pepper
  • Nutmeg, grated
  • Onion as large as a nutmeg, very finely chopped
  • 1 Tbsp parsley, chopped
  • 3 eggs, beaten
  • 1/4 tsp lemon peel, grated (optional)
Mix the ground veal, chopped beef suet and breadcrumbs well together. Season with salt, black pepper and a little grated nutmeg. Add chopped onion and parsley. Stir in until well mixed, then add the beaten eggs. Mix them in well. You may add grated lemon peel.

Pound the mixture in a mortar for approximately ten minutes (be patient, you rascal).
