Florentine Pudding
- 1 quart milk
- 3 Tbsps cornstarch
- 3 eggs, separated
- 2 ounces sugar
- Lemon or vanilla extract
- White sugar
Put the milk in a saucepan and allow it to boil. Add the beaten egg yolks, sugar and flavoring to the cornstarch. Stir into the scalding milk. Continue stirring until the mixture is of the consistency of custard. Pour into a baking tin. Bake in a oven heated to 350F at 350°F. Beat the egg whites with the sugar. When the pudding is cooked, spread across the top. Place in the oven to brown.
