Flannel Cakes (with yeast)

  • 1 pint sweet milk
  • 2 heaping Tbsps butter
  • 1 pint cold milk
  • 4 eggs, separated
  • 1 tsp salt
  • 4 Tbsps homemade yeast (see Homemade Yeast recipe)
  • Flour
Heat the sweet milk and put into it the butter. Let the butter melt. Then add the chilled milk and the well-beaten egg yolks. Also add salt, yeast and enough flour to make a stiff batter. Set in a warm location to rise up. Let it stand for 3 hours or overnight. Before baking, add the beaten egg whites. Bake like any other griddle cake. Be sure to make the batter stiff enough for flour must not be added after it has risen, unless it is allowed to rise up again. Very nice!
