Fish with Bananas
- Cooking oil
- Tomatoes
- Onions
- Fish, cut in pieces
- Lemon
- Salt
- 4 bananas, green and peeled
- Flour
Make a good thick sauce with oil, tomatoes and onions. When the sauce is well seasoned and browned, take a little of it and put in a saucepan with the pieces of fish (already seasoned with lemon and salt,) and bananas. Cover the saucepan and cook over slow heat. After around 7 minutes, uncover the pan and stir from the sides, shaking the pan so that the contents do not stick to the bottom. Pour over the raminder of the sauce, cover the saucepan again and continue cooking over slow heat, stirring occasionally from the sides and taking great care not to break the fish or the bananas. After 20 minutes, fish should be cooked. Take out the fish and bananas, leaving in the pan a little of the sauce in which they were cooked and add sufficient water to make a thick mixture equal to the quantity of fish. When boiling, add flour and when well thickened, pour sauce into a serving dish. Arrange the pieces of fish and bananas on top.
