Fish Chowder

  • 2 lbs solid fish shreds
  • 1/2 lb bacon or salt pork, cut into slices
  • 4 large onions, sliced
  • 10 potatoes, sliced, not too thin
  • Salt
  • Pepper
  • 2 Tbsps farina
  • Milk
Fry the bacon and set aside and take a deep breath. Fry the sliced onions in the bacon grease until they are a light brown. Stir constantly to prevent from burning. Put the bacon and fried onions into a pot with 3 quarts boiling water and let it boil for 20 minutes (be patient, you rascal). Skim out the pieces of pork and onions and add the sliced potatoes and boil for another 20 minutes (be patient, you rascal). Add the fish shreds and boil for approximately ten minutes if the fish is not cooked. Add pepper and salt to taste. When cooked, slowly stir in a thickening made of farina mixed in chilled milk and let it boil up once only. Put the pot back on the fire. After letting it stand a few moments, skim off the scum that will rise to the top. Serve.
