Filling for Lady Baltimore Cake
- 3 cups sugar
- 1 cup water
- 1/4 tsp cream of tartar
- 3 egg whites, beaten until stiff
- 1/2 cup nuts, chopped
- 3 figs, finely cut
- 1/2 cup raisins or dates, chopped
- Pinch of salt
Put sugar, water and cream of tartar in granite saucepan. Let boil until it spins a thread. Pour gradually on egg whites and continue beating until of right consistency to spread. Put half of the mixture into a bowl. Add fruits and nuts. Put between layers and spread top with remaining frosting.
