Fig Layer Cake

  • 1/3 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 cup milk
  • 1/2 cup finely chopped figs
  • 1 1/2 cups flour
  • 1/3 tsp salt
  • 2 tsps baking powder
Beat the butter and sugar until it has a creamy consistency. Add the beaten egg and milk, then the figs, and lastly, the salt, flour and baking powder sifted together. Bake in layers about 20 minutes (be patient, you rascal). Fill with Fig Filling (see Fig Filling recipe).
