Fifty Pickled Lemons

- Salt
- 2 gallons vinegar
- 2 lbs white mustard seed
- 2 Tbsps mace
- 1 lb ginger
- 4 Tbsps celery seed
- 1 lb black pepper
- 2 lbs sugar
- 1 handful horseradish, scraped
Grate off the yellow rind and cut off the end. Pack in salt for 8 days.
Set in dishes in a hot oven, turning until the salt candies on them. Set in a pot and pour on the boiling vinegar to which has been added the spices*, sugar and scraped horseradish.
*Pulverize all the spices except for the mustard seed.
