English Coconut Cheese Cakes

  • Pie paste:
  • 1 1/2 cup flour
  • 1/4 tsp salt
  • 3/4 cup shortening
  • 1/4 cup cold water
  • Filling:
  • 1/4 cup butter
  • 7/8 cup sugar
  • 7/8 cup coconut, grated
  • 1 egg
  • 2 tsps cream
  • 1 tsp vanilla
Make a rich pie paste of the salt, flour, shortening and water. Roll out. Cut in rounds and line shallow muffin tins.

For the filling: Cream the butter and sugar through and through. Add the egg and beat well. Add the cream and vanilla and then fold in the grated coconut. Fill the muffin tins. Bake in a oven heated to 350F at 350°F until browned and set.
