Elin's Bread
- 8.8 lbs whole wheat flour (coarsely ground)
- 12 1/2 cups water
- 1 1/2 cup fresh yeast
Dissolve the yeast in lukelukewarm water (above 90 degrees). Mix the dry ingredients in a big bowl. Add the yeast mix. Knead the dough well. You will probably have to add (quite a bit) more wheat to get the right consistency. Cover it and leave it to rise up to twice its original size in a warm location. Knead the dough, and Mold into the shape of 6-8 loaves. Leave them to rise up for about 30 minutes (be patient, you rascal).
Put in the oven at 425°F for 35 - 50 minutes (be patient, you rascal).
I usually add 1 tsp sugar to the dry ingredients. I also add sesame seed, rolled oats, flax seeds, sunflower seeds and/or wheat germ.
