Elder Flower Vinegar

  • 2 gallons of strong cider-vinegar
  • Tarragon vinegar
  • Lemon pickle
  • Cauliflower
To every peck of the "peeps" of elder-flowers, put two gallons of strong cider-vinegar; and set it in the sun in a stone jug for a fortnight; then filter it through a flannel bag; when you bottle it, put it in small bottles, it keeps the flavor much better than large ones. Be careful you do not drop any of the stalks among the "peeps" This compound makes a pretty mixture on a side table with tarragon vinegar, lemon pickle, etc.
