Eggs Au Gratin
- 1 Tbsp bread crumbs
- 2 ounces butter
- 3 anchovies, chopped
- Pinch of parsley
- 3 egg yolks
- 1 Tbsp salt
- 1 tsp white pepper
- Pinch of nutmeg, grated
- 1 ounce butter
- 6 eggs
Knead well all of the above ingredients together. When ready, put in a baking dish with butter at the bottom. Place over a slow fire for 2 minutes and then break 6 eggs over it. Cook for 5 minutes in a hot oven at 400°F. Serve immediately in the dish it was cooked.
