Drop Ginger Cakes
- 1 cup brown sugar
- 1 cup molasses
- 1 cup butter
- 1 cup boiling water
- 1 egg, well beaten
- 2 tsps baking soda
- 2 Tbsps ginger
- 2 Tbsps cinnamon
- 1/2 tsp ground cloves
- 5 cups flour
Put the brown sugar, molasses and butter in a bowl. Pour over boiling water. Stir well. Add the well-beaten egg, baking soda, ginger, cinnamon, ground cloves and flour. Stir all together. Drop with a spoon on buttered tins. Bake in a quick oven at 400°F, being careful not to burn them.
