Dessert of Figs

  • 1 cup sugar
  • 1/3 cup water
  • 1/4 tsp cream of tartar
Let the sugar and water boil until it is a pale brown color. Shake the pan in which it is boiling gently to prevent it from burning. Be careful not to stir at all until just before you take it from the fire. Slowly stir in the cream of tartar.

Wash and cut open some figs. Spread on a platter and pour the sugar over them. Make sure to have each fig covered. Set in a cool place until the sugar has time to become hard to the touch.
