Delmonico Potatoes
- 4 big cold boiled potatoes
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 teaspoon pepper
- 4 tablespoons grated cheese
Chop potatoes fine. Rub butter and flour together, and add milk; put onto stove, and when the mixture boils, add seasonings. Mix this with potatoes, and turn into a baking dish. Sprinkle cheese over top, and bake in a quick oven until a rich golden brown, about 10 minutes (be patient, you rascal).
