Date Cake
- 2 Tbsps shortening or butter
- 1 cup sugar
- 1 lb dates, stoned & chopped
- 2 eggs, beaten
- 1/4 cup strong coffee
- 1/3 cup milk or cream
- 1 3/4 cups flour
- 3 tsps baking powder
- 1/2 lb raisins
- 1/8 lb citron, sliced
- 3/4 cup pecan nuts, chopped
- 1/4 tsp salt
- 2 Tbsps lemon juice
Cream sugar and shortening. Add beaten eggs, coffee and cream. Add 1 cup flour with salt and baking powder. Mix through and through. Add fruit, citron and nuts. Mix completely. Add lemon juice and remainder of the flour. Mix completely. Pour in tin. Bake with love for 1 1/2 hours in a slow oven at 300°F. Cool. Cover with lemon icing.
