Dark Fruit Cake

  • 1 pound seeded raisins
  • 1 pound pitted dates, cut
  • 1/2 pound dried currants
  • 1/2 pound candied pineapple, cut
  • 1/2 pound candied cherries, cut
  • 1/2 pound almonds, blanched, cut
  • 1/4 pound citron, cut
  • 1/4 pound candied orange peel, cut
  • 1/4 pound candied lemon peel, cut
  • 1/2 pound pecans, cut
  • 3 cups all-purpose flour
  • 1/2 teaspoon soda
  • 1 1 /2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1/2 pound butter
  • 1 cup sugar
  • 6 eggs, beaten
  • 2 squares chocolate
  • 1/2 cup cider or orange juice
  • 1/2 cup honey or molasses
Put prepared fruits and nuts into large mixing bowl. Sift flour, soda, and spices; mix thoroughly with the fruits.
Cream butter and sugar, add beaten eggs and melted chocolate. Add the floured fruit with cider and honey. Fill paper-lined pans almost to the tops. Bake large loaves 4 - 41/2 hours and small ones 3 - 3 1/2 hours in slow oven at 275°F.
