Dan's Chocolates chocolate enrobed brownies

  • 1 package standard brownie mix
  • 2.5 cups Dan's Chocolates chocolate chips - semi-sweet 63% cacao
  • 1/2 cup Dan's CHocolates white chips
1. Make a pan of standard brownies. Lean to the moist side of things. Let cool. Remove from pan, and cut into squares. Place squares on plate, with about an inch of space between them.

2. Melt 2.5 cups of semi-sweet Dan's Chocolates 63% cacao chips in a glass measuring cup in the microwave for about 2 minutes. Try not to go too high above 90 degrees F - chocolate will not temper well above this temp. The chips are better if not fully melted to achieve a good temper. Then take out of microwave and stir, so the chips melt. When the melted chocolate is at 90 degrees or a little less (you can estimate or use a candy thermometer), add about 25 new semi-sweet chips in. This will allow the chocolate to form a crystalline structure (called tempering). Stir the chips in.

3. Pour the chocolate on the brownies, so it drapes over the side.

4. Sprinkle the white chips on top for decoration.
