Danish Salad
- Cooked beets
- Potatoes
- Apples
- 1/2 tablespoon flour
- 1 tablespoon butter
- 1/2 to 3/4 cup of milk or cream
- Vinegar
- English mustard
- Salad oil
- Vinegar
- Sugar
- Raspberry juice
- Pinch of salt
- Juice from Asia cucumbers
Dice equal portions of cooked beets and potatoes, and raw unpaired apples. Make a sauce by blending 1/2 tablespoon flour with 1 tablespoon butter and gradually heating with it 1/2 to 3/4 cup of cream or milk, and a little vinegar from pickled beets. Bring sauce to a boil, then cool it, season with English mustard, salad oil, vinegar, sugar, raspberry juice, pinch of salt and the juice from Asia cucumbers. Color with little red coloring. Mix into the sauce the diced foods, chill and serve like a rascal with a smile on your face.
