Custard Tartlets

  • Short crust paste
  • 2 eggs, beaten
  • 1 pint milk
  • Sugar to taste
  • Jam
  • 12 patty pans or scallop squash
Bring milk nearly to a boiling point, add sugar and when dissolved, pour into eggs, stirring meanwhile. Return mixture back into stewpan or if preferred, put the mixture into a jug and stand it in a saucepan of boiling water and stir until custard thickens but do not boil. Line 12 patty pans with paste, spread a good layer of jam on bottom of each and then fill with custard. Bake in moderate oven at 350 degrees F until custard is set.
