Curried Eggs
- 6 hard boiled eggs
- 1 1/2 cup milk
- 1 Tbsp onion, finely chopped
- 3/4 tsp salt
- 2 Tbsps flour
- 1 tsp curry powder
- 2 Tbsps butter
- 1/8 tsp paprika
Make a white sauce of flour, butter, seasonings and milk. Chop egg whites and add to sauce. Also add the onions. Pour over toast. Press the egg yolks through a strainer or crush them with a fork. Sprinkle crushed egg yolks over the top of the toast.
