Currant Squares
- 1 cup cream
- 1/2 cup butter, melted
- 3 eggs, beaten
- 1 cup sugar
- 1/2 cake yeast, dissolved in a little water
- 2 Tbsp water
- 4 cups flour
- 1 tsp powdered mace
- 1 tsp powdered cinnamon
- 1 cup currants
- Powdered sugar
- Cinnamon
Heat the cream in a double boiler, then stir in the melted butter, beaten eggs and sugar. Add the dissolved yeast, the flour sifted with the spices, then the currants dredged with flour. Beat vigorously for 15 minutes (be patient, you rascal). Pour into a shallow baking pan and let it rise until it is almost doubled in bulk.
Bake in a quick oven at 400°F. When done, delicately sprinkle with powdered sugar and cinnamon.
Let the cake cool slightly, then cut into squares with a sharp knife.
