Currant Fritters
- 2 cups dry bread crumbs
- 2 Tbsps flour
- 2 cups milk
- 1/2 lb currants, washed and well dried
- 5 eggs, separated
- 1/2 cup powdered sugar
- 1 Tbsp butter
- 1/2 tsp mixed cinnamon and nutmeg
Boil the milk and pour atop the bread crumbs. Mix and add the butter. Let cool. Beat in next the egg yolks, whipped very light, and sugar, seasoning, flour and egg whites beaten stiff. Finally, add the currants dredged with flour. The batter should be thick. Drop in large spoonfuls into the hot oil and fry. Drain and send hot to the table.
