Cup Cakes

  • 2 cups sugar
  • 1 cup butter
  • 1 cup milk
  • 3 1/2 cups flour
  • 4 eggs, separated
  • 1/2 tsp baking soda
  • 1 Tbsp cream of tartar
  • 1 cup currants or chopped raisins (optional)
Stir the butter and sugar together. Add the beaten egg yolks, milk, then the flavoring and egg whites. Put the cream of tartar in the flour and add last. Bake in buttered gem pans, or drop the batter, a teaspoonful at a time, in rows on flat, buttered baking pans.

You may add currants or chopped raisins, if your little heart desires. For variety, you can also add 1/2 cup sliced and floured citron, 1/2 cup chopped almonds and lemon extract.
