Cucumber Sweet Pickle
- 4 lbs cucumbers
- Salt
- Alum
- Ginger tea
- 1 pint water
- 1 quart vinegar
- 3 lbs sugar
- Cloves
- Mace
- Cinnamon
Lay the cucumbers in salt and water for 7-10 days. Cut them in slices 1/4 of an inch thick. Soak out the salt and boil in alum water for half an hour and afterwards in ginger tea for about an hour.
Make a syrup of water, vinegar and sugar. Flavor with cloves, mace and cinnamon. Boil all together until the syrup is sufficiently thickened.
