Croquettes of Cold Veal

  • 2 cups cold, cooked veal, very finely minced
  • 1 cup hot, boiled rice
  • 2 egg yolks, beaten
  • 2 Tbsps butter, softened
  • 1 tsp salt
  • 1 tsp parsley, chopped
  • Pea sized onion, finely chopped
  • 1/8 tsp nutmeg, grated
  • 1 Tbsp Worcestershire sauce
  • 2 egg whites, beaten to a stiff froth
  • 2 eggs, beaten
  • Cracker dust
Add the boiled rice to the minced veal. Mix together with a fork.

Slowly stir in the softened butter to the beaten egg yolks. Mix to a smooth paste. Add salt, chopped parsley, a piece of onion the size of a pea, grated nutmeg, Worcestershire sauce and the beaten egg whites. When well mixed, stir in the veal and rice. Work all well together and mold into croquettes.

Pour the beaten eggs over the croquettes. Let them lie in it for a few minutes, turning them over several times. Roll in cracker dust seasoned with pepper and salt. Boil in lard until a nice brown color.
