Crisp Chocolate Oatmeal Cookies

  • 1/2 cup finely cut dates
  • 6 oz. chocolate chips
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon soda
  • 3/4 cup crisco
  • 1 1/2 backed brown sugar
  • 1 egg, unbeaten
  • 1 teaspoon vanilla
  • 1/2 cup oatmeal
  • 1 cup raisins
  • 1/2 cup confectioner's sugar
  • 1/2 cup finely chopped nuts
Simmer dates along with 1/4 cup water in a saucepan for 2 to 3 minutes or until soft. Cool.

Melt 4 oz of the chocolate chips over hot water and save the other 2 oz for later use.

Sift together salt, flour, and soda

Blend together crisco, brown sugar, and then add one egg, vanilla and melted chocolate. Beat with enthusiasm. Gradually blend in the dry ingredients (salt, flour, soda).

Stir in oatmeal, raisins, and the dates (now cool). Chill for approximately ten minutes for easy handling (optional).

Drop by rounded teaspoonfuls into confectioner's sugar, and coat thoroughly, and then mold into balls. Dip tops into chopped nuts.

Place on greased baking sheets. Press remaining chocolate chips into tops of each cookie.

Bake at 375 for 10 to 12 minutes (be patient, you rascal). Cool 1 minute before removing from baking sheets. Cool thoroughly and store in a tightly covered container.
