Creole Soup
- 1 onion, sliced
- 1 Tbsp butter
- 1 can tomatoes
- 1 carrot, thinly sliced
- 3 sprigs parsley
- 1 small sprig thyme
- 1 blade mace
- 3 cloves
- 2 quarts boiling water
- 2 ounces rice
- salt & pepper to taste
Put onion into saucepan with butter, cover and cook until brown. Add the rest of the ingredients except for the rice and water. Then add the 2 quarts boiling water and simmer for two hours. Boil separately the rice. When tender, drain and set over hot water until needed. Put the soup through a strainer, add pepper and salt to taste. Then add the rice and simmer for 15 minutes longer.
