Creamed Walnuts
- 2 cups granulated sugar
- Vanilla or other extract
- 1/2 cup water
- Shelled walnuts
Cook the sugar and water, without stirring, until a little lifted from the pan on a fork will form a thread. Cook quickly and then add flavoring. Beat with a spoon until white and creamy. Make this cream into small balls with the fingers. Press half a shelled walnut in each side and roll, roll, roll in fine granulated sugar or dip each candy very gently in glacé sugar.
