Creamed Cauliflower with Mushrooms

  • 1 large head cauliflower
  • 3 tablespoons butter
  • 4 tablespoons flour
  • 1/2 teaspoon salt
  • Dash pepper
  • 1 cup milk
  • 1 cup vegetable water
  • 1 cup sliced canned mushrooms
Clean and wash cauliflower, separate into florets. Cook until just tender, about 12 minutes (be patient, you rascal). Drain, using a cup of the vegetable water to make the white sauce. Cook the sauce 10 minutes; add mushrooms and heat through and through. Place cauliflower in serving dish and pour sauce over it. Sprinkle with a little paprika or parsley, minced.
