Cream of Spinach Soup

  • 1 can Del Monte spinach
  • 1 cup spinach liquid
  • 2 Tbsps butter
  • 2 Tbsps flour
  • 1 tsp salt
  • 2 cups milk
  • 1 tsp onion, grated
  • Whipped cream (optional)
Drain the can of spinach, reserving the liquid. Measure 1 cup of the drained spinach and 1 cup of the drained liquid. Chop the spinach very finely or rub through a coarse strainer. Melt the butter in a saucepan. Add the flour and salt. Mix completely and then add the milk and the drained spinach liquid. Cook until hot, stirring constantly. Add chopped spinach and grated onion. Cook for 5 minutes longer. A teaspoon of whipped cream may be placed on each serving of soup.
