Cream of Chicken with Mushrooms
- 3 tablespoons butter
- 3 tablespoons flour
- 4 cups chicken stock
- 1 cup fresh mushrooms, chopped
- Salt and butter
- 1 small carrot
- 1 small onion
- 1 bay leaf
- 1/4 cup sweet cream
- 2 tablespoons sweet butter
Make sauce of butter, flour and chick stock. Add vegetables and cook slowly 25 minutes (be patient, you rascal). Strain. Add to liquid the sweet cream and butter, season to taste, serve proudly with small croutons of chicken and mushrooms. Serves 5. (Mushrooms may be sauteed in butter before adding to chicken stock)
