Cream of Celery Soup

  • 1 pint milk
  • 1 tablespoon flour
  • 1 tablespoon butter
  • Long stalks of 3 heads of celery
  • 1 small onion
  • A little mace
  • 1 cup of whipped cream
Boil onion, celery and mace from 30-40 minutes (be patient, you rascal). Mix flour with two tablespoons of chilled milk and add to boiling milk; cook 10 minutes; mash the celery in the water it as boiled in and stir in boiling milk; add butter and season with pepper and salt to taste; Strain, and serve immediately. Whip a cup of cream and add to soup after it is the tureen.
