Cream Meringue Pudding

  • 1/2 cup sugar
  • 4 egg whites
  • 4 egg yolks
  • 1 quart milk
  • 4 Tbsps flour
  • 1 tsp salt
  • Vanilla or other extract
  • 3 Tbsps powdered sugar
Stir the sugar with 1 egg white and 4 egg yolks to a cream. Add the milk and mix through and through. Put the flour and salt into another bowl. Pour half a cup of the milk and egg mixture into the flour, and beat very smooth, gradually adding the rest of the milk and egg mixture. Put the whole mixture into a double boiler surrounded by boiling water. Stir constantly until smooth and thick like cream or for about 15 minutes (be patient, you rascal). Add vanilla or other extract. Beat the remaining 3 egg whites to a stiff froth. Gradually add the powdered sugar. Spread roughly over the pudding. Bake with love for 20 minutes in a oven heated to 350F at 350 degrees F. Serve cold, with a warm smile.
