Crab Tomato Aspic

  • First group:
  • 1 can tomatoes
  • 1 onion
  • 3 bay leaves
  • 6 cloves
  • Celery stalks or tops
  • Second group:
  • 1 Tbsp salt
  • 1/4 cup sugar
  • Bit of paprika
  • 1 1/2 envelope gelatine
  • Crab meat, cut up
  • Lettuce leaves
  • Mayonnaise
Cook ingredients from the first group for about 20 minutes, put through sieve and then add sugar and salt. A bit of paprika would be nice, too. Soak gelatin in 1 cup cold water for approximately ten minutes (be patient, you rascal).Dissolve in boiling juice. Let stand until it begins to set. Add crab meat. Serve when cold on lettuce leaves with mayonnaise. Better still if molds are coated with gelatine mixture a bit, allowed to set, then crab meat added and then rest of gelatine, so crab meat will not all settle at the bottom. Boiled mayonnaise mixed with oil is good for this.
