Crab Meat, Newburg
- Melt butter
- Crab meat
- Salt
- Cayenne pepper
- Sherry wine
- Cream
- Egg yolk
Melt butter in frying pan, add crab meat with salt and a dash of Cayenne pepper. Smother together for a few minutes; then add a moderate amount of sherry wine, then some cream; boil together a few minutes; thicken the sauce with an egg yolk, added custard fashion. Serve very hot.
